Maria Geanopulos has been a practicing attorney since 1999. She and Dr. Geanopulos were married December 29th, 2001. It was shortly after the birth of their 3rd child (Zoe, George and Paige) she decided to take a break from her practice of law in order to expand her knowledge and experience in the field of fitness, nutrition, and coaching. Maria has been a certified coach by the Creating Wellness Alliance since 2008.
Maria has recently taken a leadership role here at New Heights Chiropractic, and will be offering her service to our growing in office and online community. Maria has become a “black belt” in the art cooking healthy, affordable meals for an entire family. She has been able to restore her health and beauty after giving birth to 3 children, and she will tell you it was not due luck or genetics, it was knowledge and work.

2 pounds ground beef (grass feed and or organic if possible)
1 tablespoons chili powder (add more according to taste)
1 1/2 teaspoons salt
2/3 cup -1 cup chicken broth (low sodium)
1/4 cup tomato paste
1 can (14.5 oz.) diced and fire roasted tomatoes with green chilies (Trader Joe’s works great)
12 to 16 taco shells or warmed soft tortillas, as desired

Sour cream, for garnish
Shredded iceberg lettuce, for garnish

Directions
Set a 12-inch sauté pan or Dutch oven over medium heat and add the olive oil. Once hot, place the onions in the pan and sauté until translucent, 3 to 4 minutes. Add in the garlic and cumin to the pan and continue to sauté until fragrant, about 1 minute. Put in the beef to the pan and cook, breaking the pieces up as they cook, until the meat is browned, about 8 to 10 minutes. Drain excess oil if necessary. Add in the chili powder and the salt. Then mix in 2/3 cup of the chicken broth, tomato paste and can of diced tomatoes to the pan and bring to a simmer. Cook the meat on low, stirring occasionally until most of the liquid has evaporated, about 30- 40 minutes. During the cooking process add another 1/3 of a cup of broth if all was evaporated. Remove from the heat and serve with the garnishes for guests to assemble their tacos to their liking.
